Adhirasam With Chekku Kadalai Ennai: The Festive Recipe

Adhirasam is the Deepavali sweet that every Tamil household attempts and only some master. The secret is in the jaggery syrup consistency and in the oil. Karuppatti chekku nallennai gives the classic deep colour and aroma.

Ingredients

  • Raw rice (pacharisi) – 2 cups
  • Jaggery (or half jaggery, half karuppatti) – 1½ cups, grated
  • Cardamom powder – ½ tsp
  • Dry ginger powder (sukku) – ¼ tsp
  • Chekku Kadalai Ennai – for deep frying

Method

  1. Soak rice for 2 hours. Drain and spread on a cloth for 20 minutes until just damp. Grind to a slightly coarse flour and sieve.
  2. Melt jaggery with ¼ cup water, strain, and boil to a soft ball consistency: a drop in cold water should form a ball that holds shape but yields to pressure. This is the critical step.
  3. Take off heat, stir in cardamom and dry ginger, then add the rice flour gradually, mixing to a soft dough.
  4. Cover with a damp cloth and rest for at least 12 hours – traditionally 2–3 days. The dough matures.
  5. Heat oil to medium (about 160°C). Grease a plastic sheet with oil, flatten a lemon-sized ball into a disc.
  6. Fry one at a time, flipping once, until deep brown. Lift out and press gently between two flat ladles to remove excess oil.

Troubleshooting

Disintegrates in oil: syrup was under-boiled – knead in a spoon of rice flour. Hard when cool: syrup was over-boiled – add a spoon of hot milk to the dough. Too much oil absorbed: oil not hot enough.

Store in an airtight box; adhirasam keeps for two weeks and improves after day two.
