Indian dietary guidelines (ICMR-NIN) recommend about 20–30 g of visible fat per person per day, and – importantly – rotating oils rather than sticking to one. Here is how our traditional oils fit into a heart-conscious kitchen.

Groundnut oil

High in monounsaturated fat (like olive oil) with a good share of polyunsaturated fat and vitamin E. A sensible everyday cooking oil, including for frying.

Gingelly oil

Balanced mono and polyunsaturated fats plus sesamin and sesamol, lignans studied for their effect on blood pressure and cholesterol. Several small Indian trials have shown modest improvements in blood pressure and fasting glucose when sesame oil replaced other oils. Promising, but not a substitute for medication.

Coconut oil

Mostly saturated fat, but largely medium-chain lauric acid, which behaves differently from animal saturated fat. Current guidance is to use it in moderation and as one of several oils, not the only one.

Practical advice

  • Measure oil with a spoon, not by pouring from the bottle.
  • Rotate: groundnut for frying, gingelly for everyday cooking, coconut for specific dishes.
  • Choose unrefined cold pressed oils so you also get vitamin E and natural antioxidants.
  • Avoid reusing frying oil more than two or three times.
  • Discuss your diet with your doctor or a registered dietitian.
